S’mores Cookie Sandwiches:
- 1/2 Recipe, Homemade Graham Crackers
- 1 cup semi-sweet chocolate chips
- 2 teaspoons butter
- 1 1/2 cups marshmallow fluff
Pre-heat oven to 350 degrees.
Lightly flour your working surface and roll out graham cracker dough to approximately 1/8″ thickness. Using a circle shaped biscuit cutter (mine was about 1 1/2″) cut the dough into circles and place onto a parchment lined cookie sheet. Combine dough and re-roll if necessary but no more than once, the cookies will be too dense and dry if the dough is over worked. Prick the tops of each cookie 2-3 times with a fork. Bake for 15-20 minutes until golden.
Place chocolate chips and 2 teaspoons of butter in a microwave safe dish and microwave for one minute. Stir until smooth. Place about 1 teaspoon full onto half of the cookies. (I usually spend a few moments trying to match up cookies that are similar in shape and size) On a separate cookie dollop about 1 teaspoon of marshmallow fluff onto the other half of the cookies. Once you’ve dolloped the marshmallow you put the cookies together. You want to do this before the chocolate has set so the cookies stay together properly. Refrigerate until close to serving.
