In the past salsa-verde has been a favorite of mine, it’s tangy and great on chicken, eggs and just about everything. I am always looking for new ways to eat light, fresh, healthy meals that are inspired by produce. When I am eating clean, I never really struggle with proteins because I have my standby’s that I could (and do) eat practically every day. Sides and salads are a bit harder for me because I can become bored quite easily with salads. I’m not naturally one of those types who just enjoy salad. Honeydew and Avocado “salsa verde” is a fantastic remix of a classic.
This one of a kind salsa recipe is something I found on Pinterest. I guess there is an added bonus to being sleep deprived and pinning at 3 am? This is meant to be served with scallops but it can be served with chicken or tortilla chips. The fresh, crisp flavors are very unexpected but amazingly well balanced.
- 1 cup Avocado, Diced
- 1 Cup Honeydew Melon, Diced
- 1 Teaspoon Lime Juice, Plus Lime Zest
- 1-2 Teaspoons Extra Virgin Olive Oil (Raw & Unfiltered if Possible)
- Celtic Sea Salt & Pepper
- Dry Oregano & Cilantro, Dry Onion Flake (optional)
Combine lime juice, lime zest, olive oil and salt and pepper. Toss with avocado and honey dew, Add onion flake, oregano and cilantro if desired. Serve cold with your favorite chips or protein!
