Grain Free Cinnamon-Flax Waffles

Everyone loves waffles, I dare say you are abnormal if you don’t. In the past six months I have made a crap ton of grain free waffles, the boys and I have loved most of them  however… most were not man meat approved. Naturally like the psycho I am I would not let it go until I found a grain-free waffle that he would eat. What we have here are the results of my hard work. (Because it is super hard to eat waffles!!!) 

These waffles are packed with protein and fiber, and yes a little maple sugar too. They are not overly sweet and they are perfectly nutty. Perfect for getting nutrient dense goodies into that picky person in your life. You can substitute butter for palm shortening or coconut oil, I use butter for flavor and  better browning. This is especially useful when using coconut flour because coconut flour can have a bizarre flavor if not dressed up properly.

Grain Free: Coconut Flour Waffles
With Cinnamon & Flax seed
Makes 5, They can be Frozen once fully cooled

1/2 cup coconut flour
4 tablespoons butter, melted
5 eggs
1 1/2 cups full fat coconut milk, (See Note)
2 teaspoons arrowroot
1/2 teaspoon xanthan gum
1/4 teaspoon baking soda
1/2 teaspoon almond extract
1 tablespoon vanilla extract
1 1/2 to 2 teaspoons cinnamon
2-3 tablespoons maple sugar, or other dry sweetener (optional)
2 tablespoons ground flax seed
1/4 teaspoon salt

Dump ingredients into a mixing bowl. Beat with a hand mixer at medium speed until no lumps remain. Allow to rest for at least 20 minutes.

Preheat Waffle Iron to High Setting- 

Use melted coconut oil to brush your iron. Dollop up to 1/2 cup of batter into your iron, (this varies depending on your waffle maker) Shut lid and allow waffles to cook until the light goes off, it beeps etc. My waffle iron usually requires me to use a high-medium-high-ish setting and after the first five minutes I have to flip the waffles and cook them a little more. Careful not to burn them!!!

Note: I use raw milk or coconut milk, I prefer not to put my raw milk into heated foods because it pasteurizes it, which …. defeats the purpose of spending $7 a gallon on milk.
Serve warm with fresh mashed fruit and butter, bacon and maple syrup are nice too.
