Flourless Peanut & Chocolate Chip Cookies

From time to time I find myself making peanut butter cookies, not because I want to necessarily but because I feel that I have to. I guess it might have something to do with the fact that I’ve bought peanut butter as well as peanuts in bulk and I cant seem to get rid of them fast enough. There’s just something about making peanut butter cookies that has a tendency to annoy me. I don’t really want to get all messy and covered in peanut butter maybe? Regardless sometimes I have to make them, they are classic standby that every kid loves. 

Flourless Peanut & Chocolate Chip Cookies
  • 1 cup creamy peanut butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips
  • 1/2 cup toasted peanuts

Preheat oven to 350 degrees. Line baking sheets with parchment or silicone mats. In a bowl combine peanut butter, sugar, egg, baking soda and salt. Mix until smooth. Stir in chocolate chips and peanuts. I was tempted to add more chocolate however I’m glad I did not. They would be impossible to handle and they would fall apart. Using a cookie scoop take a portion of dough, form dough into smooth balls by rolling in between your hands. Place cookies 2″ apart onto your baking sheet and bake for 12-14 minutes.
