Creamy, Chopped "Cold Slaw"

 Cole slaw is a family favorite. Everyone loves it, and man meat calls it cold slaw. Use homemade mayo for an awesome treat or just use a good quality mayo. The key to chunk’s favorite cole slaw is the choppy texture instead of shredded, and a boat load of mayo helps too. I use a food processor to make easy work of the chopping, it also makes the dressing making stupid simple. I leave sweetener out of the full batch but to Stephen’s I add sugar. (He’s a sugar addict x’s a million.) If your using a ready-made mayo mince your garlic before adding it to the dressing or omit it entirely.

  • 1 medium head of cabbage, chopped
  • 2 large carrots, chopped
  • 2 bunches green onions, chopped
 
Cole Slaw Dressing-
  • 1 heaping cup Homemade Mayo
  • 1 tablespoon raw cider vinegar
  • 2 or 3 cloves garlic
  • 1-2 teaspoons prepared horseradish
  • 2-3 teaspoons celery seed
  • salt and pepper
  • 1-2 tablespoons honey, sugar or any preferred sweetener to taste. (optional)
Combine dressing with chopped veg. Add salt, pepper and sweetener to taste. Refrigerate until needed, best used within a few days of making.
