This past summer my husband purchased a very large hand cranked ice cream tub, I found that it made way too much ice cream, and way too much of a mess. So for the past few months I’ve wandered around from store to store looking for ice cream makers. Alas I finally found one that was small and didn’t bankrupt me. This was the first recipe I tried out and I believe it came out absolutely fabulous! With it being summer season how could I not go about making tons of ice cream? This delightful little treat is fat free blackberry frozen yogurt. Its slightly tangy but perfectly smooth and sweet. The fresh blackberries combined with a fat free yogurt really make the perfect combination of flavors. I utilized fat free low calorie vanilla yogurt but Greek yogurt would really kick this up and make it much more creamy. (you may need to add a smidge more sugar though) I will surely be trying this basic frozen yogurt recipe again soon.
- 2 cups fresh blackberries
- 2 Whole Fat Yogurt
- 1/3 to 1/2 Cup Honey
- 2 teaspoons vanilla extract
In a blender or food processor combine blackberries and water if needed. Blend until smooth. Press this liquid through a sieve or strainer to remove the seeds. Once the seeds are removed add the mixture back to the blender or to a large bowl. Combine yogurt, honey and vanilla to the blackberry mixture. Stir until smooth. Refrigerate mixture until needed or process in your ice cream maker immediately. Place mixture into the ice cream maker and mix for 20-40 minutes. Once its mostly frozen place in air tight container and freeze for about 2 hours.
